Tuna with Wasabi Lime Butter Sauce

4 tuna steaks, 1 inch thick
olive oil
1 1/2 teaspoon crushed black pepper
1 tablespoon dill

For sauce
3 scallions, sliced thin
1 teaspoon cilantro
1 1/2 tablespoons fresh lime juice
3 tablespoons soy sauce
1 1/2 tablespoons wasabi paste
6 tablespoons butter, cold, cut into pieces

Brush tuna with olive oil and sprinkle with pepper and dill on both sides.

Marinate for 20 minutes.

In a heavy saucepan combine scallions, cilantro, lime juice, soy sauce, and wasabi paste and bring to a boil. Reduce heat to low and whisk in butter, 1 piece at a time, lifting pan from heat occasionally to cool mixture and adding each new piece before previous one has melted completely. (Do not allow sauce to simmer. Sauce should not get hot enough to separate.)

Grill or broil fish for 4 - 5 minutes each side. Serve tuna with sauce.

Grilled Marinated Swordfish

3 tbs soy sauce
2 garlic cloves, minced
3 tbs fresh orange juice
1 tbs fresh lemon juice
1 1/2 tbs olive oil
1/4 tsp dried basil
1 tbs tomato paste
1/4 tsp ground pepper
1 tbs fresh chopped parsley
4 swordfish steaks, 6-8 oz each

Combine all ingredients except swordfish, mix well. Marinate swordfish, covered, for 1 hour, turning only once. Broil or grill swordfish 4 to 5 minutes each side. Serves 4.

Baked Lemon Shrimp

2 pounds large shrimp, peeled and deveined
1 stick butter, melted
1 1/2 teaspoons minced garlic, (or to taste)
1/2 cup fresh parsley, chopped
2 tablespoons lemon zest
2 tablespoons fresh lemon juice

Preheat oven to 450 degrees.

Pour butter in a baking dish large enough to hold shrimp in one layer. Stir in garlic and half of the parsley. Add shrimp and bake for 5 minutes.

Turn shrimp and sprinkle with remaining parsley, zest, and lemon juice.

Bake shrimp until just cooked through, 5 - 10 minutes more. Serves six.
